This is quite irritating for the subscriber. Yes, providing an option at the opt out stage or even a confirm opt-out button is ok with me, but getting them to confirm their opt out via ANOTHER email to them doesnt make sense. They dont want to receive any more emails from you!...

Also, its much easier for a third party to opt someone in than it is to opt out. Without double opt in, anyone can get signed up to a list without their consent.

With a proper opt out link that gets sent to the email address of the subscriber, it is a lot harder for someone else to opt them out. For example if the opt out link is like:

http://yourezine.com/optout.pl?id=c623h3nkfg7y23vgf5

which is an auto generated, non sequential kind of opt-out message that would be better than say

http://yourezine.com/optout.pl?id=2443

which is probably a sequential opt-out which can be abused, or

http://yourezine.com/optout.pl?email=youremail%40domain.ext

Both of the above allow you to opt someone out without their consent, which may be what you are driving at.
